About Dirty Supper
Dirty Supper is a Singapore restaurant and cocktail bar helmed by Chef-Owner Peter Smit, championing whole animal cooking and grilling paired with bold, unexpected ingredient combinations. Chef Peter developed his style across kitchens in Australia, London and Singapore, and the restaurant's lean, ever-changing à la carte menu of small to large plates depends on the produce available each day, with a rotating Daily Specials board for regulars to check when they dine in.
The intimate space retains much of its former life as a coffee shop, blending vintage charm with underground, grungy touches - modified marble tables and a vintage timber table (repurposed from an old door) sit alongside a sleek, stainless-steel bar counter for a deliberately contrasting, industrial-meets-vintage feel. The open-plan kitchen houses a full-fledged grill, with counter seats offering a front-row view of the action.
Attached to the restaurant is Dirty Sips by Dirty Supper, a low-waste, ingredient-led cocktail bar run by bar boss Arjay Guarin alongside Chef Peter, turning kitchen scraps and forgotten flavours into a lean, ever-changing cocktail list. The bar is backed by an extensive, globally-sourced wine list with a focus on sustainable, minimalist winemaking, plus a small selection of craft beers.
Dirty Supper: Whole Animal Cooking and Low-Waste Cocktails in Singapore
Dirty Supper is a Singapore restaurant helmed by Chef-Owner Peter Smit, built around the art of whole animal cooking and a love of grilling paired with unexpected ingredient combinations. Chef Peter developed his culinary style across kitchens in Australia, London and Singapore before bringing it all together at Dirty Supper.
An Ever-Changing, Produce-Led Menu
With 'pride in produce' at its core, Dirty Supper's food menu is deliberately lean and constantly shifting. The à la carte offering ranges from small to large plates, with the exact lineup largely dictated by whatever produce is available on a given day. On top of the regular menu, Chef Peter keeps a rotating Daily Specials board, best checked in person when dining in, or by texting the restaurant ahead of a visit.
A Space with History
The restaurant occupies a compact space that was once a coffee shop, and the design leans into that history rather than erasing it. Vintage pieces, including a timber table repurposed from an old door, sit against modern industrial touches like a sleek, stainless-steel bar counter, creating a deliberate contrast between old and new. The open-plan kitchen houses a full-fledged grill, and diners seated at the kitchen counter get a front-row view of the cooking in action.
Dirty Sips: A Bar Built on Bold, Low-Waste Ideas
Attached to the restaurant is Dirty Sips by Dirty Supper, a cocktail bar run by bar boss Arjay Guarin alongside Chef Peter. The bar takes a low-waste, ingredient-led approach, turning kitchen scraps and overlooked flavours into cocktails that lean bold, weird, and occasionally naughty. Signature drinks like the Apple Highball (Jura 12 Yrs Sherry Cask, fresh pressed apple juice, citrus) and Getting Jacked (Jura 12 Yrs, pickled jackfruit, Noilly Prat) sit alongside more playful creations like Shiitake Happens and Chef's Water, most priced at $20++, with a smaller non-alcoholic list at $14++.
For those visiting during Sips Happen hours - Monday to Saturday, 3pm to 6pm or 10pm to midnight - cocktails are 'dirtied down' to $16++.
A Serious Wine and Beer List
Beyond cocktails, Dirty Sips features an extensive wine list spanning international and lesser-known regions and grape varieties, from Champagne (a Krug Grande Cuvee at $500 a bottle) through to smaller producers across Australia, Austria, Greece, Turkey and New Zealand, with a focus on sustainable, minimalist winemaking. A more affordable by-the-glass 'Dirty Pour' selection runs from $18 to $40, alongside a compact range of craft beers from breweries including BeerFarm and The 1925 Brewing Co.
Opening Hours
Dirty Supper runs Light Bites service Tuesday to Saturday from 3pm to 6pm, with dinner from 6pm (last order 9:30pm). Mondays open a little differently, with walk-in Light Bites from 5pm and reservation-only dinner from 6pm onwards. The Dirty Sips bar itself runs Monday to Saturday from 6pm to midnight, and the restaurant is closed on Sundays.
