About Alchemist The Mill
Alchemist is a specialty coffee roaster and café built around a single belief: quality coffee is made with clarity and consistency. What began in 2016 at International Plaza has grown into a multi-location operation across Singapore, with a commitment to sourcing, roasting, and serving coffee that prioritises approachability, simplicity, and craft.
The philosophy centres on accessibility. Rather than making specialty coffee feel exclusive or complicated, Alchemist designed everything—from their menus to their spaces to their sourcing—to be easy to understand and easy to return to every day. Built by baristas who continue to shape the company, every cup is guided by precision, care, and a long-term vision of coffee as both profession and daily ritual.
Beyond the café, Alchemist extends into workshops, retail coffee beans, soluble coffee formats, and even a Coffee Waste Initiative exploring how coffee byproducts can be upcycled into soap and other materials. As they mark their 10th anniversary, the focus remains unchanged: coffee made with intention, served with clarity.
Alchemist: Ten Years of Quality Coffee Built on Clarity and Consistency
From a Small Bar to a Coffee Movement
In 2016, Alchemist opened at International Plaza with a simple mission: serve quality coffee with clarity and consistency. What began as a small bar with an open counter quickly became something more. The space was designed to be welcoming, the coffee was dialed with precision, and the time spent with every guest reflected a philosophy that coffee is worth caring about—but not worth making complicated.
This approachability became the foundation of everything. Baristas built the company from the ground up, and they continue to shape its direction. The focus isn't on exclusivity or gatekeeping specialty coffee; it's on making clarity and craft accessible to anyone who walks through the door.
Growing Through Intentional Expansion
By 2017, recognizing that people wanted to enjoy specialty coffee beyond the café, Alchemist expanded their retail offering. Coffee beans—the foundation of every cup—became available for home brewing, extending their approach to accessibility. More people could experience the same clarity and consistency they found at the bar.
The opening of a second café location at Hong Leong Building in 2018 deepened Alchemist's presence within Singapore's CBD, bringing their philosophy to a wider everyday audience. Then in 2019 came a significant milestone: the opening of their first roastery at Khong Guan Building. This gave them greater control over the entire journey—from sourcing relationships to roasting precision—and allowed them to introduce new offerings like Cascara Tea, expanding the ways people could experience coffee.
Formats for Modern Life
Soluble, Drip, and Convenience Without Compromise
The COVID-era pivot to online retail sparked innovation. Drip bags offered a middle ground: no brewing equipment needed, but still representing the care and intention behind their roasting. More recently, soluble coffees extended accessibility even further, delivering quality coffee in a format that dissolves effortlessly in water or milk.
Alchemist's three signature blends—Dark Matter (bold), Equilibrium (balanced), and Lumos (bright)—each represent a different perspective on coffee and a different part of how people experience it. The soluble format isn't a shortcut; it's an expression of their belief that quality coffee should be easy to enjoy while remaining full of character.
A Decade of Quiet Craft
Behind every cup is sourcing, roasting, and product development shaped by care and long-term thinking. The Coffee Waste Initiative reflects a quieter, more circular way of thinking about coffee—exploring how cascara (the dried fruit of the coffee cherry) can become tea, and how other byproducts might live beyond a single use.
As Alchemist marks 10 years, they're reflecting on a journey shaped by baristas, craft, people, and the everyday moments shared over coffee. The philosophy remains unchanged: clarity, consistency, and the belief that quality coffee is worth returning to every day.
