LeVeL33 sits 33 storeys above Marina Bay on the top floor of Marina Bay Financial Centre Tower 1, and holds the title of the world's highest microbrewery in a building. From the dining room and terrace, the Singapore skyline stretches out before you, while on the other side of the glass the aromas of roasted malt and fermenting yeast drift from the on-site brewery, where beers are crafted fresh with 100% organic hops and malt.
The kitchen's so-called ContemBrewery cuisine, led by Executive Chef Jake Kowalewski, weaves brewing elements through the menu — house-brewed beers, beer-infused sauces and brewer's spent grain find their way into housemade pastas, breads and desserts. The sourcing is deliberate too: sustainable seafood exclusively, ethically pasture-raised beef, and locally sourced organic produce including vibrant greens, edible flowers and baby herbs.
The day is structured around distinct menus: a weekday Executive Set Lunch, a weekday High Beer afternoon experience, Social Dining from 2.30pm, à la carte and a dedicated vegan menu in the evenings, dessert from noon, and late-night Beer Bites. On weekends the Weekender takes over from 12–2.30pm with freshly shucked oysters, Bangalow pork tomahawk, small plates and a Signature Long Sharing Lunch for the whole table.
Beyond dinner, LeVeL33 offers brewery tours, a busy calendar of events, and three unique event spaces — including an open-air terrace — hosting everything from corporate gatherings to weddings. It's part of the Ponte Group and also runs a sustainability programme with a dedicated Sustainability Officer.
Some restaurants have a view. LeVeL33 has an altitude. Occupying the top floor of Marina Bay Financial Centre Tower 1, this microbrewery, bar and restaurant pours beers it brews in-house 33 storeys above the ground — a claim to being the world's highest microbrewery in a building. Step out of the lift and the panorama of Marina Bay and the Singapore skyline unfolds, but so does something rarer in a skyscraper: the warm, bready smell of roasted malt and fermenting yeast from a working brewery.
The beers are made entirely on-site with 100% organic hops and malt, and the brewing team is happy to talk you through what's in your glass. The standout is the Brut Beer, born of LeVeL33's relationship with Barons de Rothschild: it's crafted using the same yeast as Champagne and undergoes a second fermentation in the bottle, arriving with super fine bubbles and a dry finish. For the full story, book the brewery tour and see the tanks up close — the brewers genuinely enjoy the questions.
Executive Chef Jake Kowalewski calls the food ContemBrewery cuisine, and the name is literal. Brewing elements run through the whole menu: house-brewed beers and beer-infused sauces in the savoury dishes, and brewer's spent grain — a by-product of the mash — worked into housemade pastas, breads and desserts. Sourcing is equally considered: the restaurant serves exclusively sustainable seafood, ethically pasture-raised beef, and locally sourced organic produce, including vibrant greens, edible flowers and baby herbs.
The day has its own rhythm. Weekdays bring an Executive Set Lunch from 12–2.30pm, followed by High Beer, a dedicated afternoon beer experience from 2–3.30pm. Social Dining kicks in from 2.30pm daily, while evenings belong to the full à la carte and a separate vegan menu, both served 5–9.30pm nightly. Dessert runs from noon to 9.30pm, and Beer Bites keep the kitchen going from 9.30–10.30pm.
Saturday and Sunday afternoons are given over to the Weekender, from 12–2.30pm. Choose à la carte favourites — freshly shucked oysters, Bangalow pork tomahawk, small plates and more — or settle in for the Signature Long Sharing Lunch, a procession of starters, mains and desserts for the whole table. Either way, it's a leisurely way to spend a weekend with the skyline as backdrop.
Founder Dr. Martin Bém envisioned a place where freshly brewed craft beer and skyline views come together; brewmaster Gabriel Garcia, an Argentinian native trained in Germany, has been behind the beers for years, with Thomas Sobota running the bar. Together they keep the taps and the cocktail list aligned with what's fermenting downstairs.
LeVeL33 offers three unique spaces on its top-floor perch, each with its own setting, from private dining to an open-air terrace. It hosts corporate events, private gatherings and weddings, and a dedicated team handles occasions of every size. Sustainability is treated as part of the operation rather than a footnote, with a Sustainability Officer on staff and spent grain put back to work in the kitchen.
Open daily from 12 noon to 11pm, with reservations available online and by phone, LeVeL33 works as much for a weekday set lunch as for a milestone celebration. Note that there is a dress code — worth checking before you go — and a vegan menu in the evenings for plant-based diners. Few places in Singapore combine altitude, brewing and cooking this closely; fewer still let you watch the source of your beer while the city glitters below.
