A good sushi takeaway is judged on how fresh its fish looks and how well its rice is handled, so ask how often the sushi is made. Salmon and prawns are a useful thing to check, since they show quickly when stock is not turning over. Teriyaki rice boxes travel well, but they are best eaten soon after packing. Clean counters and neatly labelled containers are a fair sign of how a takeaway runs.
