The Boiler Seafood Bar and Beer is a Singapore seafood boil restaurant serving fresh seafood in bold sauces that fuse local and western spices. The concept traces back to 2008, when the owner — a banker-turned-restaurateur — was introduced to a seafood boil restaurant in LA by relatives and fell in love with the rich Cajun culture behind it. After countless backyard crab feasts, he developed his own fusion of Asian and American spices, resulting in a secret recipe of 11 different spices and ingredients that remains closely guarded — the owner still hand-packs it himself every night after the restaurant closes.
The Boiler positions itself as one of Singapore's most unique dining experiences, built around an intimate ambience, communal seafood boil dining, music, and drinks. The restaurant introduces limited-time-only flavours each month, developed specially by the chefs.
Over the years, The Boiler has picked up recognition including the Best Seafood Chope Award 2017 and a spot on Chope's Hottest Dining list, alongside features in publications such as American Express Magazine, Xin Cuisine Magazine, BBC Goodfood, Expat Living, Singapore Business Review, TimeOut, 8 Days, The Sunday Times, The New Paper, Simply Her, FHM, BiTES, Epicure, and a spot on HungryGoWhere's Top 20 lobster dishes in Singapore list. The Boiler operates two locations: Esplanade Mall and Elementum in Buona Vista.
The Boiler's story starts far from Singapore, in a Los Angeles seafood boil restaurant that the owner — a banker turned restaurateur — was introduced to by relatives back in 2008. It was love at first sight. Intrigued by the rich Cajun culture behind the dish, he set out to recreate that communal, hands-on dining experience for his own family and friends, working through countless backyard crab feasts before landing on the flavours that would define The Boiler.
What emerged from those backyard experiments was a fusion of Asian and American spices — a recipe of 11 different spices and ingredients that The Boiler still keeps as a closely held secret. Remarkably, the owner hand-packs the spice mix himself every night after the restaurant closes, a detail that speaks to how personally the recipe is still guarded years into the business.
The restaurant describes itself as aiming to ignite all five senses, bringing together fresh, tasty seafood with an unassuming dining atmosphere, live music, and a full drinks list under one roof. It's built for groups — family and friends gathering for what The Boiler calls the best camaraderie and dining experience, with a promise that guests will leave with 'tasty fingers' after digging into the seafood boil. To keep things interesting for regulars, the kitchen also rolls out limited-time-only flavours each month, developed specially by the chefs.
The Boiler has built up a substantial track record of press coverage and industry recognition since opening. It picked up the Best Seafood Chope Award in 2017 and a spot on Chope's Hottest Dining list in 2019, alongside a steady stream of magazine and media features — American Express Magazine, Xin Cuisine Magazine, BBC Goodfood, Expat Living, Singapore Business Review, TimeOut, 8 Days, FHM, BiTES, and Epicure among them. The Sunday Times Singapore included The Boiler in a 2015 piece on 'food in unlikely places,' while The New Paper named it a hidden gem in a feature on far-flung dining spots. Simply Her Magazine singled out the fish and chips as 'one of the best we've had,' and HungryGoWhere included The Boiler among Singapore's Top 20 lobster dishes.
The Boiler operates from two Singapore locations. The Esplanade Mall outlet sits at 8 Raffles Ave, #01-13A Annexe Esplanade Mall, right next to the taxi drop-off point, and is reachable via City Hall MRT or Esplanade MRT (Circle line), a wide range of bus services stopping along Raffles Avenue and Esplanade Drive, or by taxi from the stand at the mall entrance. The second location, at Elementum in Buona Vista, is found at 1 North Buona Vista Link, #01-03, just outside Buona Vista MRT Exit D on both the East-West and Circle lines.
Both outlets keep the same hours: lunch runs daily from 11:30am to 2:30pm (last order 2:15pm), while dinner runs from 5pm to 10:30pm, with last order at 9:15pm Sunday through Thursday and a later 9:30pm last order on Fridays, Saturdays, and the eve of public holidays.
The Boiler welcomes enquiries about events and large group bookings through a form on its Contact Us page, and is also actively looking to hire enthusiastic candidates, with applications directed to [email protected]. Reservations for either outlet can be made by phone, and the restaurant maintains a presence on Facebook, Instagram, and TripAdvisor.
