Rosemary's Pub sits on Tūwharetoa Street in the middle of Taupō, and it makes no apology for what it is: a true dive bar. Rather than a sad pie warmer, Rosemary's runs a scratch kitchen that turns out proper pub grub: juicy burgers, tacos, loaded fries and a solid list of small plates. Every burger is served on a freshly toasted brioche bun. Start with The Cheesie — a chuck and brisket beef patty with cheese, pickles, diced onion, burger sauce and American mustard — or step up to The BBC, introduced on the menu with the line 'You're very welcome, Taupō', which adds bacon, mayo and BBQ sauce to the formula. Chicken fans can pick the Chicken Deluxe or the Spicy Hawaiian with grilled pineapple and spicy mayo, both available southern fried or grilled, while the Herbivore (V) stacks crumbed tofu, ranch, pickled onion, lettuce and pico de gallo.

Around the burgers sit a shelf of small plates: honey butter buns with Rosie's honey butter, corn-battered fried pickles, grilled romaine with herb vinaigrette and parmesan, crumbled halloumi sticks with Bloody Mary dipping sauce, twice-cooked pork belly bites with sriracha, and cheeseburger spring rolls stuffed with brisket, cheese, pickles and onions.

The taco board is where the kitchen shows off. Southern Fried Tacos pile fried chicken with pickled onions and garlic ranch; Prawn Tacos bring crumbed prawns and spicy mayo. But the Birria Tacos are the ones people talk about — slow-cooked brisket and short rib with mozzarella, green and white salsa, consommé and lime. The menu's own review: 'It'll change your life.'
