The Evolution of Craft Roasting

Pete’s journey into the world of coffee began in 2010 on a modest Quest M3 roaster. Driven by a fascination with the science and subtlety of bean development, he refined his craft over years of experimentation before taking the leap into commercial roasting in 2016. Setting up inside a converted warehouse, the operation upgraded to a 5kg Probat roaster and has since expanded further with a 12kg Probat roaster.

To ensure every batch achieves optimal flavour, the roasters are computerised to guarantee precise, repeatable results day after day. Pete and Serena focus rigorously on testing green beans, understanding origins, and dialling in roast profiles that bring out the natural sweetness, body, and acidity of each harvest.

This intimate tour walks participants through the selection of green bean origins, moisture and quality testing, roasting mechanics, and real-time roast development. Guests get to roast their own batch on the machines and take home a freshly bagged sample.
